π₯ nana pancakes π₯ :
ingredients -
π 1 1/4 cups white flour (156g)
π 2 tbsp white sugar
π 1 tbsp baking powder
π 1/4 tsp Salt
π 1 tsp Cinnamon
π 1 mashed banana
π 1 tsp nilla extract
π 1 Tbsp Coconut Oil or vegan butter
π 1 3/4 cup nut milk
combine your dry ingredients, flour sugar, baking powder, salt, and cinnamon in a bowl
mash up your banana and then add in your oil of choice. mix well, and then combine with your dry ingredients and the vanilla and the nut milk. once you've stirred it all together, you will have a very sticky and thick batter.
oil and heat up a pan, then add batter bit by bit to make each individual pancake. you can experiment to make them bigger or smaller depending on the amount of batter you use.
this part is fun because you can add more tasties. while the pancake is still uncooked on the top, sprikle on some chopped nuts, blueberries or even chocolate chips! once the top is slightly bubbling from the heat, flip it over with a spatula and cook the other side as well. keep oiling and adding batter until you have made all of your pancakes!
nilla milk :
this recipe has gotten popular on tiktok with the name "angel milk", but my sweet (grandma) used to make this for me since i was a baby, and called it 'nilla milk' so that is what i call it
ingredients -
πΌ milk you like ; i like soymilk, macadamia or oatmilk
πΌ vanilla ; sweet would use real mexican vanilla, which you can order on amazon. it has the BEST flavor (much better than vanilla extract)
πΌ sugar (how much is up to you)
if you like warm milk, but are not big enough for the stove, you can heat it up in the microwave in a coffee mug. i like my nilla milk cold, with ice, like sweet made it
mac n cheebs :
ingredients -
π₯¦ pasta you wish to b'cheebs
π₯¦ 1 1/2 cup raw cashews
π₯¦ mustard
π₯¦ 1/2 cup nooch (nutritional yeast)
π₯¦ paprika
π₯¦ 2 cloves garlic
π₯¦ 1 1/2 cup nut milk
π₯¦ 1 tsp salt
π₯¦ yummies you wish to add to your mac (i suggest broccoli or peas)
soak your cashews for a couple of hours or overnight; if you've like to speed up the process, boil some water and then add your cashews. take the cashews off the heat, and let them sit in the hot water for 45 minutes.
when your cashews are ready, drain them and set them aside. boil your pasta while you combine the mustard, nooch, paprika, garlic, nut milk, and salt and put them all in a blender. put your cashews into the blender as well. blend until smooth. add more nut milk if needed to get the texture you want.
steam or otherwise prepare your vegetables as desired. when your pasta is finished boiling, drain it, and then add the pasta to the pan with your veggie yummies. toss with a light amount of coconut or olive oil, and then add your blended cashew sauce.
toss the sauce with your pasta and veggie mix until the temperature is consistent.
"baby noodles" :
this dish was named by my friends for being very simple and easy to eat but so yummy!
ingredients -
π rice noodles
π soy sauce
π 1 tsp sesame oil
π 1 tbsp coconut oil
π veggies (broccoli, bell pepper, carrot, and water chestnut all go well with this recipe. buy frozen if you like to save prep time and want the veg to last longer)
π umami powder (this one might be hard time find, but you can use extra soy sauce if you need to replace it)
π 2 tbsp peanut butter
π green onions
π veggie broth
π 2 or 3 cloves of garlic
cut up your veggies while you heat the veggie broth, sesame oil, and coconut oil in a sauce pan. add your garlic and green onions and let them simmer for a bit.
boil a pot of water and add your noodles. keep and eye on them while you add the peanut butter and stir until it forms a nice creamy sauce. add your veggies and let them cook a bit.
once your noodles are ready, remove them from the heat, drain, and then add them to the saucepan. toss the noodles with the sauce and enjoy :)
